The oldest picture so far found of this site. Note that the road is identified as "Sunrise Trail." This name was apparently not widely used, but the road now known as "Montauk Highway" was referred to as "Sunrise Trail" on a post card of the Shinnecock Hills in Southampton. Sounds more bucolic than just Merrick Road or Montauk Highway.
Note also that there appears to be a Texaco sign to the right, suggesting that they also sold gasoline, not uncommon for a roadhouse of the era.

This post card from my personal collection at first appears identical to the one above, but there are subtle differences. How many can you find?
Both post cards are hand colored, and the colorists have added their own interpretations. I think I would too. It no doubt got a bit boring adding color to perhaps hundreds of cards, in most cases not even being familiar with the actual site.

The Mastic Hour Restaurant had a long tenancy in the building, from the 1950s through the early 1970s. It was well known as a place for Italian style food and pizza. This is a copy of their advertisement from the 1955 Bellport High School Yearbook.
